Thai Peanut Noodles (Serves 4)

Creamy peanut-lime noodles with crispy tofu (vegetarian) or seared chicken (meat), topped with quick-pickled cucumbers, crunchy peanuts, and fresh herbs. Sauce is mild β€” heat gets added per-bowl.

Ingredients

Base

  • 12 oz spaghetti or linguine (or lo mein noodles)
  • Β½ cup creamy peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey (or brown sugar)
  • 2 cloves garlic, grated
  • 1 tbsp fresh ginger, grated
  • Juice of 1 lime
  • 1 tbsp toasted sesame oil
  • ⅓–½ cup hot water (to thin the sauce)
  • Sriracha, to taste (serve on the side β€” keep the base kid-mild)

Protein Options

  • Vegetarian: 1 block (14 oz) extra-firm tofu, pressed and cubed + 2 tbsp cornstarch + 2 tbsp neutral oil
  • Meat: 1 lb chicken breast or thighs, sliced thin + 1 tbsp soy sauce + 1 clove garlic, minced

Toppings

  • 1 English cucumber, thinly sliced (quick pickle: 2 tbsp rice vinegar + 1 tsp sugar + pinch of salt)
  • 1 cup shredded carrots
  • 3 green onions, sliced
  • ΒΌ cup fresh cilantro, chopped
  • β…“ cup roasted peanuts, crushed
  • 1 lime, cut into wedges

Instructions

  1. Quick-pickle the cucumbers: Toss cucumber slices with rice vinegar, sugar, and salt. Set aside while you cook β€” they're ready in 15 minutes.
  2. Make the sauce: Whisk peanut butter, soy sauce, rice vinegar, honey, garlic, ginger, lime juice, and sesame oil. Whisk in hot water a splash at a time until pourable (it should coat a spoon but drip off).
  3. Crispy tofu (vegetarian): Pat tofu cubes dry, toss with cornstarch and a pinch of salt. Pan-fry in neutral oil over medium-high, turning occasionally, until golden and crisp on most sides, 8–10 minutes.
  4. Chicken (meat): Toss chicken with soy sauce and garlic. Sear in a separate skillet over medium-high until cooked through and lightly browned, 5–6 minutes.
  5. Noodles: Cook pasta in salted water until al dente. Reserve Β½ cup pasta water, then drain.
  6. Combine: Toss hot noodles with the peanut sauce, loosening with pasta water as needed until glossy.
  7. Serve bowl-style: Noodles first, then each person adds their protein and builds toppings β€” pickled cucumbers, carrots, green onions, cilantro, crushed peanuts, lime wedge. Sriracha at the table for the adults.

Tips

  • Toddler bowl: plain-ish peanut noodles + soft tofu cubes + shredded carrots is usually a win. Skip the pickles and sriracha.
  • Press the tofu while you prep everything else β€” even 10 minutes helps it crisp.
  • Sauce thickens as it sits; save extra pasta water for reviving leftovers.
  • Peanut allergy swap: almond butter or tahini both work with the same ratios.
