Stir Fry

Base serves 2 with leftovers β€” slide to scale the ingredients.

Ingredients (Serves 2-3):

  • 1 lb protein of choice (chicken breast, beef sirloin, tofu, or shrimp)
  • 2 tbsp vegetable or sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup snap peas or snow peas
  • 4 oz mushrooms, sliced
  • 2 green onions, sliced
  • 2 cups cooked rice or noodles for serving

Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar or honey
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 2 tbsp water
  • Optional: 1-2 tsp sriracha or chili garlic sauce for heat

Instructions:

  1. Prepare the sauce by whisking all sauce ingredients together in a small bowl. Set aside.
  2. If using meat, slice into thin strips. For tofu, press and cut into cubes.
  3. Heat 1 tbsp oil in a large wok or skillet over high heat.
  4. Add protein and cook until browned and cooked through (about 3-4 minutes for chicken/beef, 2 minutes for shrimp, 5 minutes for tofu). Remove and set aside.
  5. Add remaining oil to the wok. Add garlic and ginger, stir for 30 seconds until fragrant.
  6. Add onions and cook for 1 minute.
  7. Add vegetables that take longer to cook first (carrots, broccoli) and stir fry for 2 minutes.
  8. Add remaining vegetables (bell pepper, snap peas, mushrooms) and stir fry for another 2-3 minutes until vegetables are crisp-tender.
  9. Return protein to the wok, pour the sauce over everything, and toss to combine. Cook for 1-2 minutes until sauce thickens.
  10. Garnish with green onions and serve over rice or noodles.

Variations:

  • Beef & Broccoli: Use sliced beef, double the broccoli, and add a dash of five-spice powder to the sauce.
  • Teriyaki Chicken: Use chicken, add 2 tbsp teriyaki sauce to the sauce mixture.
  • Spicy Tofu: Use firm tofu, double the sriracha in the sauce, add crushed peanuts as garnish.
  • Shrimp & Vegetable: Use shrimp, add bok choy and water chestnuts to the vegetables.

Notes:

  • For best results, have all ingredients prepped before starting to cook as stir frying goes quickly.
  • Protein can be marinated for 30 minutes before cooking in a mixture of soy sauce, garlic, and a little cornstarch for tenderness.
  • Vegetables can be substituted based on what's available - use approximately 4-5 cups total.
