Quesabirria-Style Quesadillas (Serves 4)

Base serves 2 with leftovers — slide to scale the ingredients.

Crispy griddled quesadillas with a rich, chile-red dipping consomé. The meat half is shredded chipotle-braised beef; the vegetarian half is a smoky mushroom–black bean filling with its own dipping broth. Uses a pantry-friendly chipotle braise instead of hunting down dried chiles.

Ingredients

Meat Half — Chipotle Braised Beef

  • lbs top sirloin cap (picanha), cut into 2" chunks with the fat cap left on (chuck roast also works — add ~30 min braise time)
  • 2 chipotles in adobo + 2 tbsp adobo sauce (from one small can)
  • 1 tbsp tomato paste
  • ½ large white onion, quartered
  • 4 cloves garlic, smashed
  • 3 cups beef broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 tbsp apple cider vinegar (or white vinegar)
  • Pinch of cinnamon
  • Salt & black pepper

Vegetarian Half — Mushroom–Black Bean Filling

  • 12 oz cremini mushrooms, sliced
  • 1 can (15 oz) black beans, drained and rinsed
  • ½ large white onion, diced
  • 2 cloves garlic, minced
  • 1 chipotle in adobo, minced + 1 tsp adobo sauce (from the same can)
  • ½ tsp ground cumin + ½ tsp dried oregano
  • cups vegetable broth (for the veg dipping consomé)

Assembly

  • 12 corn tortillas (or 6 medium flour tortillas — flour is easier for beginners)
  • 3 cups Oaxaca or Monterey Jack cheese, shredded

Toppings

  • ½ cup fresh cilantro, chopped
  • ¼ cup white onion, finely minced
  • 2 limes, cut into wedges

Instructions

  1. Braise the beef (2–2½ hrs ahead, or morning-of in a slow cooker): Season the beef with salt and pepper and sear hard in a Dutch oven, fat cap down first so it renders. Add chipotles, adobo, tomato paste, onion, garlic, broth, cumin, oregano, bay, vinegar, and cinnamon. Cover and braise at 300°F for 2–2½ hours until shreddable (or slow cooker on low 6–7 hrs). Sirloin cap is leaner than chuck — pull it as soon as it shreds; don't push it further.
  2. Shred: Pull the beef apart in the pot. Skim the fat off the braising liquid into a small bowl (this is quesadilla-dipping gold) and reserve the liquid — that's the consomé.
  3. Veg filling: Sauté mushrooms in oil over medium-high until browned and dry, 8 minutes. Add onion, cook 3 minutes; add garlic, chipotle, cumin, oregano. Stir in black beans and a splash of veg broth; mash lightly. Warm the remaining veg broth with a spoonful of adobo sauce as the vegetarian consomé.
  4. Griddle: Dip one side of each tortilla in the skimmed braising fat (veg: brush with oil) and place fat-side down in a hot skillet. Top with cheese and filling, fold, and griddle 2–3 minutes per side until crisp and deeply red-gold.
  5. Serve: Stack quesadillas with bowls of hot consomé for dipping. Top with cilantro, minced onion, and a squeeze of lime.

Tips

  • Toddler version: a plain cheese quesadilla, no dip (or a tiny bowl of mild consomé for dunking — dipping is a toddler sport).
  • Two chipotles keep the braise family-mild; add a third if it's just adults.
  • Leftover birria beef makes killer tacos, rice bowls, or ramen later in the week.
  • Corn tortillas crisp better; warm them first so they don't crack when folding.
