Pasta Primavera

Base serves 2 with leftovers — slide to scale the ingredients.

Ingredients:

  • 12 oz pasta (penne or fettuccine)
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions:

  1. Cook pasta according to package instructions.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Add bell pepper, zucchini, cherry tomatoes, and broccoli. Sauté until vegetables are tender.
  4. Toss cooked pasta with vegetables. Season with salt and pepper.
  5. Garnish with fresh basil before serving.
