Fried Rice (Serves 4)
Base serves 2 with leftovers β slide to scale the ingredients.
Ingredients:
- 3 cups cold cooked day old rice
- 2 eggs, beaten
- 2 cloves garlic
- 1 onion
- 1/2 cup frozen peas and carrots
- 2 green onions
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- 1 tbsp sriracha
- Optional protein: 1/2 lb ground beef (or tofu, chicken, shrimp)
Optional: Steak Tips for Fried Rice (serves 4)
- Steak: 3/4β1 lb sirloin tips, sirloin, or strip steak, thinly sliced against the grain
- Quick marinade (velvet): 1 tbsp soy sauce, 1 tsp sugar, 1 tsp cornstarch, 1/8 tsp baking soda (optional), 1 tsp neutral oil
- Optional: 1 tbsp Shaoxing wine or dry sherry
Method (do this before stir-frying the rice):
- Toss sliced steak with marinade ingredients (and wine if using). Rest 10β15 minutes.
- Heat 1 tbsp neutral oil in a very hot wok/skillet. Sear steak in a single layer 45β60 seconds per side until just browned. Do this in batches; avoid overcrowding. Remove to a plate and add back in Step 6.
Instructions:
- If using ground beef: In a large skillet or wok, cook ground beef over medium-high heat until browned and cooked through. Drain excess fat and set aside. If using steak tips: sear as described above and set aside (do not overcook).
- Cook the eggs in the same pan or separately, then set aside.
- SautΓ© onions and garlic for 20 sec, then add peas/carrots and cook for 2 min.opj up
- Add rice and stir fry for a couple minutes.
- Stir in soy sauce, oyster sauce, sesame oil, sugar, and sriracha.
- Add back eggs, green onions, and protein of choice (ground beef, steak tips, tofu, etc.). Stir to combine and heat through.
- Enjoy!
