Chipotle Corn & Black Bean Tostadas (Serves 4)
Base serves 2 with leftovers — slide to scale the ingredients.
Crispy tostada shells loaded with smoky chipotle black beans, charred sweet corn, a sharp lime-cabbage slaw, and chipotle crema. Naturally vegetarian at the base — fresh chorizo gets cooked separately for the meat stacks. Everyone builds their own, which is the whole point. About 25 minutes.
Ingredients
Chipotle Black Beans
- 2 (15 oz) cans black beans, drained and rinsed
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 2 chipotle peppers in adobo, minced, plus 1 tbsp of the adobo sauce
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp smoked paprika
- ⅓ cup water
- Salt to taste
Charred Corn
- 3 ears fresh sweet corn, kernels cut off (about 2¼ cups; frozen fire-roasted corn works)
- 1 tbsp olive oil
- Pinch of salt
Lime Cabbage Slaw
- 4 cups thinly shredded green cabbage (about ½ a medium head)
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tbsp olive oil
- ½ tsp salt
Chipotle Crema
- ½ cup sour cream
- 1 tbsp adobo sauce (from the chipotle can)
- 1 tbsp lime juice
- Pinch of salt
Base
- 8–12 tostada shells (or 10 corn tortillas fried/baked crisp — see Tips)
Protein Options
- Vegetarian: as-is — the chipotle beans carry it. Plant-based chorizo if you want more.
- Meat: ½ lb fresh Mexican chorizo, casings removed
Toppings
- ½ cup crumbled cotija (or queso fresco)
- 1 avocado, sliced
- Pickled jalapeños
- 1 lime, cut into wedges
- Extra cilantro
- Hot sauce
Instructions
- Slaw first (it improves as it sits): Toss shredded cabbage, cilantro, lime juice, olive oil, and salt in a bowl. Set aside and let it soften while everything else cooks.
- Crema: Stir sour cream, adobo sauce, lime juice, and salt together. Thin with a splash of water until it's drizzleable. Refrigerate.
- Chorizo (meat side): Cook chorizo in a skillet over medium-high, breaking it up, 6–8 minutes until browned and crisp at the edges. Drain and set aside in its own bowl — keep it fully separate from the beans.
- Char the corn: Wipe the skillet (or use a second one). Heat olive oil over high heat, add corn kernels in a single layer, and let them sit untouched 2–3 minutes until charred in spots. Stir and char 2 minutes more. Salt and set aside.
- Beans: In the same skillet over medium, heat olive oil and cook the onion 3–4 minutes until soft. Add garlic, chipotles, adobo, cumin, chili powder, and smoked paprika; cook 1 minute until fragrant. Add beans and water, then simmer 5 minutes, smashing about half the beans with the back of a wooden spoon so the mixture holds together on a shell. Season with salt.
- Warm the shells: Spread tostada shells on a sheet pan and warm in a 350°F oven for 3–4 minutes. They crisp back up and stop tasting stale.
- Build at the table: Shells out, then beans → charred corn → slaw → crema → cotija → avocado and jalapeños. Chorizo bowl stays on the meat end of the table.
Tips
- Toddler version: skip the tostada entirely — a soft flour tortilla with smashed beans and cheese, folded, plus a little pile of plain (un-charred) corn kernels on the side. Reserve a spoonful of corn before it hits the skillet.
- Heat control: the chipotles are the only real heat. Use 1 instead of 2 and it's mild enough for everyone; the adobo sauce in the crema still gives you the smoke.
- Making your own shells: brush corn tortillas both sides with oil, bake at 400°F for 10–12 minutes, flipping halfway. Cheaper than shells and considerably better.
- Two skillets saves time. Run the chorizo in one and the corn/beans in the other and this comes together in 20.
- Leftover beans are excellent on eggs the next morning, and leftover slaw goes straight into fried rice later in the week.
