Chili Rellenos

Base serves 2 with leftovers β€” slide to scale the ingredients.

Ingredients:

  • 8 large egg roll wrappers
  • 8 whole canned roasted green chilies
  • 8 strips Monterey Jack cheese
  • Oil for frying
  • Fresh diced tomatoes
  • Shredded lettuce
  • Refried beans
  • Additional green chili sauce

Instructions:

  1. Place a strip of Monterey Jack cheese inside each green chili.
  2. Wrap each chili tightly in an egg roll wrapper, sealing the edges with a little water.
  3. Heat oil in a deep skillet or fryer to 350Β°F.
  4. Fry the wrapped chilies in batches until golden brown and crispy, about 3-4 minutes.
  5. Drain on paper towels.
  6. Serve topped with additional green chili sauce.

Notes:

  • Ensure the oil is at the correct temperature to avoid soggy wrappers.
  • Use a slotted spoon to remove the chilies from the oil.
  • Adjust the heat of the green chili sauce to taste.
